Ingredients
  

Main Ingredients:

  • 1 cup sweet corn kernels (fresh, frozen, or canned, drained)
  • ½ cup creamed corn
  • ½ cup all-purpose flour
  • ¼ tsp pepper
  • ½ tsp paprika (optional)
  • ½ tsp garlic powder (optional)

For the Batter:

  • ½ cup cornmeal
  • 2 large eggs
  • cup buttermilk
  • ½ tsp baking powder
  • ½ tsp salt

Cooking Essentials:

  • Vegetable or canola oil for frying

Optional Add-Ins:

  • ½ cup shredded cheddar or mozzarella cheese
  • 2 tbsp diced jalapeños

Prepare the Corn Mixture:

  • In a mixing bowl, combine the sweet corn kernels, creamed corn, all-purpose flour, pepper, paprika, and garlic powder. Mix until well combined.

Make the Batter:

  • In a separate bowl, whisk together the cornmeal, eggs, buttermilk, baking powder, and salt until smooth.

Form the Nuggets:

  • Using a spoon or small cookie scoop, portion out the corn mixture and shape it into small nuggets.
  • Dip each nugget into the batter, ensuring it is fully coated.

Fry the Nuggets:

  • Heat vegetable or canola oil in a deep pan or fryer to 350°F (175°C).
  • Fry the nuggets in small batches for 3–4 minutes, turning occasionally, until golden brown and crispy.
  • Remove the nuggets with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.

Serve:

  • Serve the corn nuggets hot with your favorite dipping sauces like ranch, spicy mayo, or honey mustard.
