Instructions
Prepare the Corn Mixture:
In a mixing bowl, combine the sweet corn kernels, creamed corn, all-purpose flour, pepper, paprika, and garlic powder. Mix until well combined.
Make the Batter:
In a separate bowl, whisk together the cornmeal, eggs, buttermilk, baking powder, and salt until smooth.
Form the Nuggets:
Using a spoon or small cookie scoop, portion out the corn mixture and shape it into small nuggets.
Dip each nugget into the batter, ensuring it is fully coated.
Fry the Nuggets:
Heat vegetable or canola oil in a deep pan or fryer to 350°F (175°C).
Fry the nuggets in small batches for 3–4 minutes, turning occasionally, until golden brown and crispy.
Remove the nuggets with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
Serve:
Serve the corn nuggets hot with your favorite dipping sauces like ranch, spicy mayo, or honey mustard.
