For the Crust

graham cracker crumbs or crushed Samoa cookies

For the Cheesecake Filling

For the Samoa Topping

shredded coconut, toasted

melted chocolate (dark or semi-sweet)
Instructions
Prepare the Crust
:
Preheat oven to 325°F (165°C).
In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter.
Press mixture into the bottom of a springform pan, forming an even layer.
Make the Cheesecake Filling
:
In a large bowl, beat softened cream cheese, sugar, and vanilla extract until smooth.
Add eggs one at a time, mixing until just incorporated.
Stir in heavy cream and mix until smooth.
Pour filling over prepared crust.
Bake the Cheesecake
:
Place the springform pan in a larger pan. Add hot water to the larger pan to create a water bath.
Bake for 60–70 minutes or until edges are set and the centre is slightly jiggly.
Cool to room temperature, then refrigerate for at least 4 hours or overnight.
Add the Samoa Toppings
:
Spread caramel sauce over the chilled cheesecake.
Sprinkle toasted coconut evenly over the caramel layer.
Drizzle melted chocolate over the top for decoration.
Serve
:
Chill for 1 hour before slicing. Garnish with extra caramel and chocolate if desired.
