Ingredients
  

For the Crust

  • 2 cups graham cracker crumbs or crushed Samoa cookies
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted

For the Cheesecake Filling

  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • ½ cup heavy cream

For the Samoa Topping

  • ½ cups shredded coconut, toasted
  • 1 cup caramel sauce
  • ½ cup melted chocolate (dark or semi-sweet)

Instructions
 

Prepare the Crust:

  • Preheat oven to 325°F (165°C).
  • In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter.
  • Press mixture into the bottom of a springform pan, forming an even layer.

Make the Cheesecake Filling:

  • In a large bowl, beat softened cream cheese, sugar, and vanilla extract until smooth.
  • Add eggs one at a time, mixing until just incorporated.
  • Stir in heavy cream and mix until smooth.
  • Pour filling over prepared crust.

Bake the Cheesecake:

  • Place the springform pan in a larger pan. Add hot water to the larger pan to create a water bath.
  • Bake for 60–70 minutes or until edges are set and the centre is slightly jiggly.
  • Cool to room temperature, then refrigerate for at least 4 hours or overnight.

Add the Samoa Toppings:

  • Spread caramel sauce over the chilled cheesecake.
  • Sprinkle toasted coconut evenly over the caramel layer.
  • Drizzle melted chocolate over the top for decoration.

Serve:

  • Chill for 1 hour before slicing. Garnish with extra caramel and chocolate if desired.
