Instructions
Step 1: Prepare the Crab Mixture
Cook fresh crab meat, or use pre-cooked crab at room temperature.
Season the crab with a pinch of salt, paprika, and optional cayenne pepper.
Mix gently to distribute seasoning evenly.
Step 2: Whisk the Egg and Cream Mixture
Combine egg yolks, heavy cream, Dijon mustard, salt, and pepper in a bowl.
Whisk until smooth and creamy, avoiding foam formation.
Step 3: Assemble the Brulee
Divide seasoned crab meat into ramekins.
Pour the custard mixture over the crab, fully covering it.
Tap ramekins lightly to remove air bubbles.
Sprinkle grated Parmesan or Gruyere cheese on top.
Step 4: Bake to Perfection
Preheat oven to 325°F (160°C).
Place ramekins in a water bath within a baking dish.
Bake for 35-40 minutes until custard sets with a slight jiggle in the center.
Cool slightly, refrigerate for 1-2 hours to meld flavors.
