The Brownies:

  • 1 cup unsalted butter, melted
  • 1 cup granulated sugar
  • ½ cup brown sugar, packed
  • 3 large eggs
  • 1 tsp vanilla extract
  • ¾ cup cocoa powder (unsweetened)
  • 1 cup all-purpose flour
  • ½ tsp salt

The Ganache Topping:

  • 1 cup semisweet chocolate chips
  • ½ cup heavy cream

The Toppings:

  • ½ cup rainbow candy-coated chocolate chips (or mini M&Ms)

Instructions
 

Preheat the Oven:

  • Preheat your oven to 350°F (175°C).
  • Line a 9x9-inch baking pan with parchment paper, leaving an overhang for easy removal.

Make the Brownie Batter:

  • In a large mixing bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth.
  • Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  • In a separate bowl, sift together cocoa powder, flour, and salt. Gradually fold the dry ingredients into the wet mixture until combined. Avoid overmixing.

Bake the Brownies:

  • Pour the batter into the prepared pan and level the top with a spatula.
  • Bake for 20–25 minutes, or until a toothpick inserted in the center comes out with moist crumbs (not wet batter).
  • Allow the brownies to cool completely in the pan before adding the ganache.

Make the Ganache:

  • Heat heavy cream in a microwave-safe bowl or small saucepan until it begins to simmer (do not boil).
  • Pour the hot cream over the chocolate chips and let it sit for 2–3 minutes.
  • Stir until smooth and glossy.

Assemble the Cosmic Brownies:

  • Pour the ganache over the cooled brownies and spread evenly with a spatula.
  • Sprinkle rainbow candy-coated chocolate chips generously over the ganache.

Chill and Slice:

  • Refrigerate for at least 1 hour to allow the ganache to set.
  • Use the parchment paper overhang to lift the brownies out of the pan.
  • Slice into squares or rectangles to replicate the classic Cosmic Brownie shape.
