Instructions
Preheat the Oven:
Preheat your oven to 350°F (175°C).
Line a 9x9-inch baking pan with parchment paper, leaving an overhang for easy removal.
Make the Brownie Batter:
In a large mixing bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth.
Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
In a separate bowl, sift together cocoa powder, flour, and salt. Gradually fold the dry ingredients into the wet mixture until combined. Avoid overmixing.
Bake the Brownies:
Pour the batter into the prepared pan and level the top with a spatula.
Bake for 20–25 minutes, or until a toothpick inserted in the center comes out with moist crumbs (not wet batter).
Allow the brownies to cool completely in the pan before adding the ganache.
Make the Ganache:
Heat heavy cream in a microwave-safe bowl or small saucepan until it begins to simmer (do not boil).
Pour the hot cream over the chocolate chips and let it sit for 2–3 minutes.
Stir until smooth and glossy.
Assemble the Cosmic Brownies:
Pour the ganache over the cooled brownies and spread evenly with a spatula.
Sprinkle rainbow candy-coated chocolate chips generously over the ganache.
Chill and Slice:
Refrigerate for at least 1 hour to allow the ganache to set.
Use the parchment paper overhang to lift the brownies out of the pan.
Slice into squares or rectangles to replicate the classic Cosmic Brownie shape.
