Instructions
Prepare the Mayonnaise Base
:
In a mixing bowl, whisk together the egg yolks, lemon juice, and Dijon mustard until smooth.
Slowly drizzle in the olive oil while whisking continuously to emulsify the mixture. (Take your time to ensure a creamy, stable mayo.)
Season with salt and black pepper to taste.
Add the Blue Jam
:
Gently stir in 2–4 tablespoons of blueberry jam (start with less and adjust to taste).
Balance the Flavors
:
Add the minced garlic and lemon juice, mixing thoroughly. Taste and adjust the seasoning with salt or lemon juice as needed.
Final Blend
:
For an extra-smooth consistency, blend the aioli with an immersion blender or food processor for a few seconds.
